Gentleman -- we had the first cold, windy and wet weekend of the fall up here in the Northeast and the "first you make a roux" thought was echoing in my head.

So, for the never members of the board who might not have had the pleasure of meeting the man, or getting some of his recipes, I present you with :

Lazy man's jambalaya

Well, this recipe is sort of cheating, but works fine and you yankees should be able to get all the stuff.

one # of ground beef, browned;

1-1/2 # peeled raw shrimp;

one # sliced hot link sausage (cut in thin slices), browned;

1-1/2 cups raw long grain rice, washed;

one 10-1/2 oz. can of cream of chicken soup;

one 10-1/2 oz. can of onion soup;

one white onion, chopped;

one half cup of chopped bell pepper (I hate bell pepper, so I omit);

one stalk of celery, chopped;

half a small jar of minced garlic;

salt & pepper to taste, also tobasco to taste, but take it easy on the tobasco.

Mix all the above in a large bowl and place in a two quart casserole dish, cover and bake at 350 for an hour and a half. Serves 6.

I never had the pleasure.
Got o hang with Patrick several times .... saw him last at the Lauderdale boat show 2015.
Saw Walter's boat in Montauk Marine Basin (always a sponsor with a giveaway to our events) and commented to the marina owner an old friend named Carl Darenberg about the boat as he rode by on a golf cart.
He was selling Walter's boat, now he's gone too.
Life is short .... with the only guarantee being that it wont last forever.

AH! A almost forgotten UV Recipe. We always said we were going to put these all together and never have. Dam Shame.

These pre UV members don't know what they mixed. Not only could he make a Roux, but he knew how to stir the pot.

I made his recipe for ribs last week . If anyone would like it they could call me at 631-457-2587 and I'll tell you how to do it and he was a good man and always treated me first class from the first time I spoke to him for no reason besides he was a total gentleman

If I remember correctly, Uncle Vic was an Armenian... I just finished reading a great book: The Forty Days of Musa Dagh...
