I thought you guys would enjoy seeing the waterline of a B31 with no decks or tanks (6bts still in). It has been warm in the keys for the past few days (my condolences for you guys up north) so I jumped in the water and took these pics of our boat.

Wow. That is impressive and makes me rethink my OB plans for a 31 Bertram. Figure that has 2400 lbs worth of iron and still floats like that.
A couple, or three, Merc 600s and you'll bury the chines! Those things weigh about 1200 ea.!

Remember the weight of Diesel is roughly 8 lbs a gallon, believe it or depending on the temperature.
So at 8 lbs a gallon, with 220 gallons you are at 1,760 lbs and lets say 300 lbs for the tank, so lets call it 2,000lbs sitting in the stern. Remove the diesels, lets call that 3,000lbs ( probably more when you pull the shafts struts etc). You need to make up around 4,500 lbs to get the water at the Chines.
Now remember you had Weight center and at the stern. So some how, I would think you need to not just add engines at the stern, but then some thing midship to reset the center of gravity.
