We grill a lot....usually 4 times a week, year around (the other nights it's leftovers for the kids and we skip, or pizza).
Lump charcoal (Wicked Good Charcoal is the best....order it by the flat) on our HastyBake has served us well for the last 10 years, but it was a little lacking in the long roast category....brisket (for you Texans), Boston Butt (with a vinegar sauce) for NC BBQ, and ribs...oh yes...melt in your mouth ribs.
We got a wood pellet feed grill now (Trager)...and it is the kitties titties.
Load it up with the wood of choice (mesquite, hickory, etc.)...set the temp and the auger feeds the pellets into the burn chamber so you get a pretty constant temp....low for the long stuff, or higher like I've got going for the two birds I've got on now...
Just wanted to share...the thing ain't really cheap...but it works, and we use it all the time. I'd like to taste some salmon that was smoked on one sometime....

You bet...best ribs/rump/etc you've ever tasted...bring some of that dead stuff y'all have been shooting and we'll throw that on too.So is that what your going use to chef up vittles for us when we come to visit? And who's running the boat?? If it's the guy you were talking about someplace else should we bring our own fenders?. Are libations included on the charters? None of that PBR swill please.
New Captain, so crash helmets won't be necessary.
Libations included...hmmmmm....will probably wind up costing more than fuel, but for y'all it's a package deal. And it's not PBR...please...we have much more couth than that....it's Natural Light.
