skipjack tuna

Wound up witha a good sized skipjack tuna today. Never ate it before, but my girlfriends daughter (the chef) is here this week and made some into a delicious ceviche ....
then choped some fine, sauteed it with garlic and anchovies and roasted peppers and made it into a great pasta sauce.

Damn, must be cookin' night....that sounds good, I'm an anchovy freak....Miss Elaine calls my anchovy salads "Puss & Boots"....I peel some smallish shrimp raw, boil them for 2 minutes in sea salted water, then ice the water to bring it to room thep and let them soak for about 5 minutes....then put them in a bowl with some baby spinach from Whole Paycheck, some crumbled blue cheese, sliced greek olives, chopped anchovies, and just pour some good olive oil over the whole mess and toss it....aaaaiiiiiiiiiieeeeeeeee!!!!!
