Just using the steel gasket and nothing else is fine.

Don't reuse the steel gasket as they have a chasing ridge that does the sealing. Once flatened, throw it away.

A ten year old set of elbows should have no more than an 1/16 to 1/8 buildup of carbon.

Anymore can be attributed to many things, some not all the bad,

1. Excessive trolling, slow speed running.
2. Poor fuel quality. More prevalent in seasonal areas and older tanks in the US.
3. Leaky injectors, pump. Not shutting off the fuel completely.
4. Low compression leading to incomplete combustion.
5. Dirty air inlet filter.
6. Dirty turbo inlet blades.
7, Dirty inter cooler if equipt.
8. Over loaded engine.
9. Running the boat just at the edge before turbo spin up.
