fiberrglass types and uses

I would like to start a discussion on the different types and uses for fiberglass on boats. I am starting on refitting my 73' 35 bertram. It needs a lot of work. I have to replace things like salon balkhead, rudder table, engine beds. Anyway, I haven't found a lot of information about where and why to use certain types of fiberglass. i.e. cloth vs mat or roving. In the tips and tricks the rudder table uses roving in between the plywood and biaxal mat over. Why? Other than roving will print through.
I hope that you can get me started in the right direction. I want to do as much myself as I can.
