Several weeks ago on a post entitled "Howdy boating on the cheap" Vic offered to share his Boston Butt recipe us. Well I took him up on his offer and he sent me a copy of his Cajun cooking recipe.

Just as we planned for the Labor day weekend, 2 of my friends and myself roasted a 50 pound pig and 4 Boston Butts.

We were joined by 110 friends and family...........the entire day was perfect.........no rain or afternoon storms, the pig and butts turned out great, lots of good company.

I strongly recommend Vics "Boston Butt" recipe..............delicious! ! !

Down here closer to the Mexican border, taco de perro is a staple...

It's been said: "The only dogs you find in Mexico are at a taco stand".

I was in Chicago years ago in a training seminar with a bunch of crazy Canadians. Every place they took us to eat had "Butt Steak" on the menu. Finally one of the Candian brothers asked a waitress what exactly it was. When she explained what cut it was, he said he thought they had something like that back home, "But we call it something much nicer, eh?" He said that sounded like something you'd have to go to a little bedroom in the back to get.
