This is how we clean fish in South Louisiana... Just count your fingers afterwards.

If I tried cleaning fish that fast, I would have to pull my pants down to count to 10 !!

Marshall- I saw some guys at the cleaning table in Venice that were zipping through Redfish and Trout, but they were using those electric fillet knives. It looked like those were commonly used because there were electric plugs above the cutting boards. No one ever uses them up north, but I was amazed at how well and how quick they worked.
