Where is the best place to buy a rebuilt carburetor for a 454" AFAIK I have Rochester Quadrajets with non-electric (remote?) choke.

In the past I used https://flyingfishcarburetors.com/index.html for a carb rebuild on my 3.0L motors, I got 3 seasons out of it before needing to rebuild again.
Ethanol is no friend, after rebuilding the carb on my snow blower, lawn mower 2-3 times, the 2nd time needing a carb rebuild I did it myself after watching some youtube videos and taking lots of pics along the way.
Since then I had a 175 Yamaha which had 6 carbs in groups of 2 and I rebuilt them too. It is actually not a bad process once you get the hang of it.
My experience is that the crap fuel sits in the fuel bowl and cruds up and eventually jamming the float and the low speed idle passages. The main jet seems to always be fine.

Your on Long Island. There is plenty of Hot Rodders out there. If you have any friends that are into the old cars they will more than likely know someone that rebuilds carburetors. These are no different than any other to rebuild.
Try Cap-A-Radiator they will know where you should go and who to ask for.

I used these people. They test run each carb before sending it out. They are also quick as your carb is just a core and they have the rebuilt ones ready to ship out.

I talked to the guy at Flying Fish today and gave him the part number stamped on my carburetors - 17057299. He said that those carburetors were for a much smaller engine, something like a 3.7 or 4.3 liter V-6. Does that sound plausible?
I ran a test on the bay today in light wind and virtually no chop:
2800 rpm - 18-19 knots
3000 rpm - 21+ knots
Wide open, I got up to 3800 rpm - 25+ knots.
I was on the boat by myself with about 125 gallons of fuel. My props are 18x18. Carburetors are Rochester Quadrajets.
The rpm number that I got running wide open looks to be about 300 rpm or more lower than some of the numbers that I have seen here for 454s. Does that indicate that I am over propped or could it be because I have the wrong carburetors?
Both engines started and ran well today and last week so I am putting the idea of rebuilt carburetors on hold until one of them acts up again.

I have Rochester Quadrajets also. Mine sit on 1988 Crusader 454s (350 Model). While my props are stamped 18x18 I know they measure under that, closer to 17x17.5.
I should ask about your transmissions - I believe mine are VelvetDrive 1.52 to1 but will check.
For me:
2600-2700 rpm produces a reliable 20 knots.
3100 rpm is about 24 knots.
3500 rpm is about 28 knots.
I believe I am under propped as I have to be careful not to exceed 4400 rpm if I pin the throttles.
I have found my carburetors to be reliable. When the engine was not producing full power it was the distributor cap/rotor. These engines can run well enough on 7 cylinders to fool me if I am just cruising around.
