With the price of current 31s that need work, I would say get a different hull to redo and continue to use your boat until she is done. You could find a 31 already in the states and this way you are not under time pressure.

Looks like a Left hand rotation Bravo 2 sterndrive.
For speed you can try a Bravo 1 or Bravo 3 lower unit as the uppers are all the same.

Looks good. I think many of your trim and clearance issue are caused by the jackplate. The rise should be greater for the engine allowing the ram to pivot and also not crush the rigging tube. Does the control box have a start/stop switch?
Yamaha and Mercury have it and that allows you to mount the key out of the way or hidden. With a pilothouse, I would suspect the lanyard is more a hassle and liability.

I had a 225hp with low compression on #5 cylinder and still ran great. I fished with 6 guys and still ran good. A single small block 350 propped right has plenty of power. There is a member with a single 150hp 4 cylinder Mercury Four Stroke and gets 30mph out of his 25ft Express.

Quad F350 Yamahas will burn 140 gph at WOT. Right around 40gph at cruise. That is total for all four engines.
It is not bad when you consider these are 40ft-50ft boats. At WOT they are really moving (50mph+).
