I've been wearing mil surplus tactical gloves for shooting for the past year. I'm pretty happy with them, and the hard knuckles would probably make them pretty good for wrench work too.

Re: Copper grounding strap
Wire works fine. If I was going to use wire though, I'd use bare wire, just to make sure that no one ever mistook it for something it isn't. The advantage to the strap is that you can nail it to stuff, bolt stuff to it, and as soon as you see it you know it's the bonding strap.

I used hanger strap. It's thicker than copper tape, and you don't have to cut sheet stock down to size.

You could install a fluxgate compass down below, and mount a display anywhere. If you have autopilot, then you already have a fluxgate compass, and could probably tap into it.

I believe that it's generally accepted that Zero Fahrenheit is safe for long term storage. Microbial activity has pretty much stopped at that point. Re: rust spots on Awlgrip
The bolts might be 304, which eventually rust a bit on their own. But it's also possible that the rust came from installing 316 stainless hardware with non stainless tools. Stainless steel loves carbon, and will eat it up on contact. Eventually you wind up with rust, usually in screw heads and bolt ...

My opinion is that for a total reconstruction like that, your best bet is to speak with a marine architect. Wholesale chopping often leads to imbalance.
