I keep four anchors on board. The first is a properly sized Fortress. The second is a 'one size up' Fortress (bought used and cheap), in case I want to use two anchors to stay exactly on a piece of bottom. The third is a rather large fortress for storm duty, and the fourth is a 16' diameter parachut...

Are you sure that it's diesel and not motor oil? Is the oil over full? Was the engine close to sitting level while running, or was the ass end maybe down quite a bit? After you ran it for the 30 minutes, did you idle it for a few minutes to cool the turbo before shutting down or did you shut it down...

I think you'll need to go to 2" full flow. Keep one of your old 1.5" valves for your generator. You can use a reducer to get the valve to accept the 1" hose that the gen-set will most likely want.

I blasted 42 years of bottom paint off of my boat this winter. Cant wait to get into the water.....

I think that a searchlight on the bow of a 31 would be just about as ugly as a pulpit..... I had docking lights on my '73 and removed them many years ago for exactly the reason that you stated. Most grease can be thinned with oil, so you might want to start with Corrosion X. Let it soak overnight, then powerwash with a little Dawn, or some citrus based cleaner.

The money may be in the iron, but the key is your budget. There are plenty of old diesel engines in service today. They're mostly heavy (for their output), dirty, loud, slow, and in need of TLC. If you have the resources and prefer a more pleasant B31 experience, don't think twice. No need to reinve...
