The safest varnish removal over veneer will be with an orange oil stripper. Here's an article that sums it up nicely.

I've used Citristrip before with good results. That was on solid wood, but I'd have no reservation if using it on veneer...

White Sikaflex®-291 LOT is a good choice, far better than any 3M product. Use 2" #10 flathead tapping screws for attaching the PVC rail, 1" #8 oval head tapping screws fot the SS rub rail.

i2systems Apeiron A1110 4.5 watt dimmable is what I used on Hancock's B31... Worked out well. They're bright enough to comfortably light the interior, but aren't book reading lights. LED has a long way to go before it truly overcomes incandesent, but these are probably as close as you can get today....

Rudders look big.
Good eye John... They appear to be maybe Buck Algonquin after market castings and lacking an inch or two in depth. Also look a bit too far aft like Chris', (Kiffa's), Bahia Mar was before he moved them forward.
