Do not exceed 330 hp in the B31. You don't have enought hull/prop clearance for proper loading of a higher hp engine. That's assuming, of course, that you're talking about diesel...
The two main choices are Yanmar and Cummins. Volvo, Perkins, Cat, and others have been used.

A word of caution on black anodization... It fades relatively fast to a blotchy grey/black and will show underlying color.
I've seen black anodized outriggers fade in as little as 3 seasons, and my black security cameras went from black to gold in under a year...

What most people don't realize is, that even though the engine is hot, once that cold air strts rolling over the radiator, especially at 60, the wind chill will freeze the radiator right up. Greg, Starboard would be a bad choice. Too much expansion/contraction for that application. Best material would be high pressure Formica/Pionite style laminate epoxied to a core. No need to prime, just prep by cleaning well and wipe with denatured alcohol. Overall surface should be 80 grit or courser...

Since you're replacing the bronze shaft logs with fiberglass, go ahead and grind down the strut and rudder gelcoat and fair bottom with Awlfair. No need to further grind anything else... Awlfair is a 2 part epoxy and will bond to all just fine. Then re-barrier coat.

Never could figure the logic of having 2 sinks in a 31- boat... Last one I did, I eliminated the head sink altogether, leaving only 1 sink in the galley area.I'm planning to minimize the sink surface to approx. half (if not less)

My best on the sound was when Bruce and I delivered a 56' Hatt aftcabin from LI NY down to Palm Beach. Real wild ride across the Pamlico in beam to slop. Got a little better after we turned west into the Albemarle, but dodging crab pots in that slop was a nightmare... What a pig of boat!

Since you won't have access to the underside of the sole, you'll have to screw the flange of the drain down. And, unless your environmental laws are an issue, you can pump gray water directly overboard.

Harry, Don't know about the new stuff, but with all urethane glues, you really need to clean up excess right away. Once it hardens it's a real bitch in tight areas... At least with epoxy, you've got a little longer window to clean up in. You might think of using an epoxy that's in side by side plung...
