Nothing sticks well to PVC. I would use coosa, divinycell, foam, or plywood in that order. I have ordered lots of material from these guys over the years. Tru fuel and Stihl MotoMix work great for me. In Wilmington, NC we can buy non-ethanol gas at many stations, but up here in the land of the liberals (N. Va), there is ZERO non-ethanol fuel available.

I would use Evercoat or bondo for small holes/dings. For large rot or holes, I have had very good luck with epoxy fillers like Sculpt Wood or the Jamestown product. I used 2oz cloth (not mat) when I finished the inner hull sides in an attempt bridge all of the heavy weave. Worked fairly well, but I still busted my backside fairing out all of the exposed areas. Many rounds of fill/sand before primers. It's work...no way around it.

Looks pretty reasonable! One trick I use is to fill the weave of the glass with thickened epoxy or epoxy fairing compound while it is still green (chemical bond). Those are the original anchor locker vents. They are non-functional now, but I wanted to pay homage to the original design so I re-installed them. There is a weep hole in the back to let water drain out. Just decorative "bling".

I would buy 5 gallons, at least. Mix in relatively small batches. Install bulkheads around your fuel lines.

Well...I wouldn't stress too much about. I think the key is to get the stringers secured aft. The bending forces up in the bow are minimal given the sharp bow entry. I have yet to discover the purpose for that piece. I would leave it in place and glass around it, not over it. Are you glassing both sides of the stringers? I would not glass over the tops, just run strips up the sides.
