That does present a problem Joe but it is workable. I see 2 choices, one is, (assuming the pipe is still in good enough shape to accept a weld) make fitting that will accept the EGT Sensor and weld it to and thru the Jacketed pipe. Install it in the exhaust pipe that bolts to the Turbo......very near the Turbo so that you measure the EGT just as it comes out of the Turbo Charger

Personally, I would not drill and tap my Turbo housing or manifold at all.

for what its worth

I used common SS 1/4" carriage bolts and simply ground a flat on the head so that it would fit the slot in the aluminum frame......you can get them at most any hardware store......they are 18-8 grade

Eric I did pressure test my Cummins Aftercoolers at the time of reassembly. The O'ring sealing areas were in good shape and I was not so worried about getting a good seal there but I wanted to know for sure that the Core itself did not have Pin Holes. I tested mine at 40 PSI. I don't think it matter...
