I have made a couple of half hull of sailboats. It isn't that hard to do and get good results if you have a decent set of lines to work from.
A half hull model was traditionally used as a means of defining the shap of a hull, and the lines were taken from the model, not the other way around as we do it today. Only a half hull was made because it was easier, and also because making both sides of the hull match 100% EXACTLY for the purpose of taking off lines is tough.
If you just want a model that looks great, that level of precision isn't needed, and a full-hull model should be pretty straight forward.
